It's hairy crabs season and Peony Jade has brought in live hairy crabs from the famous Yang Cheng Lake in China’s Jiangsu Province. From 12 October to 15 November 2010, Peony Jade’s Executive Chef, Ryan Shiu will prepare hairy crab creations.
Here are some of the dishes we have tried:
Hand-peeled crabmeat roll with shredded radish($12). Our starter dish, just like traditional springrolls but tastier, with the delicate meat and roe from the hairycrab.
Double boiled supreme sharks’ fin soup with hairy crab and chinese herbs($58 /person). The soup is surprisingly sweet and a whole crab is added in for extra flavour.
Braised supreme shark’s fin with hand-peeled hairy crabmeat, golden roe and egg white($78 /person). It's like crab roe-flavoured sharks fin. A dish that's savoury with a tinge of sweetness from the hairy crab.
It's the best time to have hairy crabs as its at the peak of the season, where the golden roe is most rich and appetizing.
